Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 cup onions, (green, white and red finely chopped)
  • 1 large sized green chilideseeded and finely chopped into chunks
  • 1 cup pineapple (cut into chunk sized)
  • 3 tbsp Thai green curry sauce
  • 4 tbsp soy sauce
  • 2 cups brown rice uncooked
  • 2 golden eggs whisked together
  • ½ cup frozen peas
  • 225 grams bamboo shoots,drained
  • 2 cups frozen prawns, cooked and raw
  • 1 tbsp lemon juice
  • Some lemon wedges
  • 1 tbsp chopped corianderleaves for garnishing

Instructions

  • Take a nonstick pan add the olive oil let them heat up then add the onions let them cook for about 2 minutes until they are tendered or softened
  • Then stir in then peppers, pineapples, soy sauce and curry paste. Let them cook for about 5 minutes
  • Then add the water-soaked rice, stir them frequently until they are piping out
  • Then lightly push the eggs to one side and the scrambled eggs to the other side
  • Then stir in them the peas, bamboo shoots, and prawns into the eggs and rice
  • Let them cook for about 5 minutes
  • Then finely stir in thespring green onions, lime juice and coriander
  • Then transfer them in a bowl and then serve them with lime wedges
