Ingredients

  • 3 large, sweet potato(peeled and cut into chunk)
  • 1 tbsp extra-virgin olive oil
  • 8 chicken thighs skin on
  • 2 large red onion, cut into wedges
  • 2 cups long stem broccoli
  • 2 tbsp Piri Piri spice mix

Instructions

  • Preheat an oven at 450 degrees F
  • Take a large tin, add the sweet potatoes chunks sprinkle some salt and pepper and then olive oil. Toss them to combine all the ingredients together until well combined
  • Push the potatoes to one end of the tin and the chicken with onions to the other side, then sprinkle some spices, drizzle some oil and some seasonings
  • Now transfer them to the oven and let them roast for about 40 minutes while stirring them halfway through
  • Then put the broccoli, then drizzle with some oil and season them
  • Let them roast for about 15 minutes
