- 2 courgettes
- 125 gr of fresh mozzarella
- 600 gr pasta fusilli
- hard-boiled egg
- a spoonful of fresh basil
- 60 gr olives
- 3 Big fresh salad tomatoes
- pepper to taste
- salt to taste
- fresh basil to taste
Instructions
Cold Italian Pasta Salad Recipe. Directions
- Bring to boil abundant salted water and then add the pasta fusilli.
- Meanwhile, wash all the vegetables and cut them into slices. In a non – stick pan, add a drizzle of Evo oil and heat on a medium flame.
- Add the courgettes and stir-fry lightly for five minutes, adding a pinch of pepper. Cook the eggs; once cooked, put them aside.
- Cut the tomatoes into cubes and put them in a bowl: season them with a drizzle of oil, salt, pepper, and fresh basil.
- Cut the mozzarella into cubes and put it aside. Now peel off the eggshell and put it away.
- Drain the pasta, let it cool under running cold water, and then transfer it to a salad bowl.
- Season the pasta with vegetables, mozzarella, green olives, and the eggs cut into two each.
- Mix well and cover it with cling film and place it in the refrigerator until ready to serve.
