Ingredients

  • 5 large sized Yukon potatoes peeled and cut them in cube shaped
  • 1 large, sweet orange pepper thinly sliced
  • 1 large sweet red pepper thinly sliced
  • 1 shallot finely chopped
  • 4 minced garlic cloves
  • 1 tbsp extra virgin olive oil
  • 2 tbsp smoked paprika
  • Some salt to taste
  • 1 tsp dried thyme
  • 1 tsp red pepper
  • 19 ounces sausage links
  • Some finely minced thyme leaves to garnish

Instructions

  • Preheat an oven at 450 degrees F
  • Take a baking pan, put the potatoes, sweet peppers oil, salt, pepper, shallots, and garlic. Toss them to coat well
  • Spread them evenly on the pan. Then put the sausages
  • Transfer them to the baking oven and let them bake for about 35 minutes until they sausages are softened and tendered
  • Sprinkle some chopped thyme leaves then serve them and enjoy
