- 2 cups spaghetti
- 3 minced garlic cloves
- 1 fennel halved and thinly sliced
- 80 grams nduja paste
- 2 cans tomatoes chopped and chunked
- ⅛ cup black olives pitted and sliced
- 3 tbsp tomato puree
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 40 grams pecorino
- Handful of the chopped basil leaves
Instructions
- Take a deep-frying pan add all the ingredients except pecorino, and basil leaves
- Deep fry them and sprinkle some salt and black pepper. Pour the hot water over them and let them simmer and let the spaghetti soften
- let then simmer for about 12 minutes
- Now stir them through the pecorino, and basil leaves
- Serve them with a drizzle of some olive oil and pecorino on the side
