Ingredients

  • 2 cups spaghetti
  • 3 minced garlic cloves
  • 1  fennel halved and thinly sliced
  • 80 grams nduja paste
  • 2 cans tomatoes chopped and chunked
  • cup black olives pitted and sliced
  • 3 tbsp tomato puree
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 40 grams pecorino
  • Handful of the chopped basil leaves

Instructions

  • Take a deep-frying pan add all the ingredients except pecorino, and basil leaves
  • Deep fry them and sprinkle some salt and black pepper. Pour the hot water over them and let them simmer and let the spaghetti soften
  • let then simmer for about 12 minutes
  • Now stir them through the pecorino, and basil leaves
  • Serve them with a drizzle of some olive oil and pecorino on the side
