Ingredients

  • 2 cups all purpose flour
  • 1 tbsp dry nutritional yeast
  • ½ tsp the caster sugar
  • Some extra olive oil for greasing
  • 4 tbsp extra virgin olive oil
  • 1 tbsp minced garlic cloves
  • 1 cup pasta
  • tbsp caster sugar
  • 1 small aubergine (sliced into discs)
  • ½ cup ricotta
  • cup chopped mint leaves
  • extra virgin olive for drizzling

Instructions

  • Take a bowl add flour, lukewarm water, yeast, salt, oil and caster sugar. Stir them to combine all the ingredients together until well combined
  • Until the thick and elastic dough is formed, then pull the dough out of the bowl and then knead them for 5 minutes until the dough is thick and elastic
  • Then put the dough in the bowl and cover them with ad amp kitchen towel and let them set aside for 2 hours
  • Take a bowl add all the sauce ingredients and stir them to combine well. Then take a bowl add the olive oil and pour the sauce ingredients in the pan and let them cook for about 10 minutes
  • Let them simmer. Then add some caster sugar and let them too tart. Set them aside
  • Take out the pizza dough and roll on them in round pizza shape
  • Then put the pizza dough in the pan. Brush the surface of the dough with some extra virgin olive oil and then sprinkle the cling film
  • Then set them aside for 15 minutes until they are doubled
  • Take a nonstick pan, add the olive oil, then add the aubergine in the pan. Then sprinkle some salt and black pepper. Then let them cook for 5 minutes. Let them cook and then transfer them to the bowl and then cover them with a foil to keep them warm
  • Take a nonstick pan add some olive oil then carefully put the dough in the pan, let them cook until they are turned into golden brown and hard
  • Flip them a littleand drizzle some olive oil on the edges
  • Let them cook for about 5 minutes more
  • Then spread the sauce over the dough evenly. Top them with some aubergines and some ricotta. Sprinkle the mint leaves and then drizzle some extra virgin olive oil
  • Then serve them and enjoy
