  • 6 ounces breakfast sausages
  • 3 tbsp unsalted melted butter
  • 4 potatoes finely chopped
  • 1 onion in diced form
  • 1 minced garlic clove
  • 1 red bell pepper finely diced
  • 6 sweet peppers thinly sliced
  • 1 tbsp thyme leaves for garnishing
  • 1 tbsp thinly sliced chives
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • salt to taste
  • ground black pepper to taste
  • 4 golden eggs
  • 1 sheet of the frozen puff pastry

  • Preheat an oven at 400 degrees F
  • Take a nonstick pan, turn on the flame, put the crumbled sausages, and cook them for about 4 minutes. Then transfer them to the bowl and set them aside.
  • Take another nonstick pan and add the melted butter, let them heat up, then add the minced garlic and onions, let them sauté for some time, add the chopped potatoes and sauté them with the rest of the ingredients for about 5 minutes. Sprinkle some salt and ground black pepper to taste.
  • Combine the sweet peppers and bell peppers stir them with the rest of the ingredients until well combined. Then sprinkle the flour on them stir them to blend for 3-4 minutes
  • Slowly pour the milk into the pan with the rest of the ingredients and stir to mix to make a thick gravy
  • Then fold the sausage back into the gravy and let them cook for 3 minutes then set aside them
  • Now cut the puff pastry sheets into 4 rectangles then cut the puff pastry sheets into 4 circles
  • Put them on the baking sheet and let them bake for about 10 minutes
  • After that take the rectangular baked puff pastry and put the gravy on each pastry and then press them now put the circle puff pastry sheet on the gravy and crack an egg on them
  • Transfer the baking tray back to the oven and reduce the temperature at 375 degrees F
  •  Let them cook for about 7 minutes until the pastries set in to golden brown and the eggs are settled
  • Then after that time remove them and sprinkle some salt and black pepper top with minced thyme and serve them
