Ingredients

  • 1 tbsp butter
  • 3 courgette (then cut them in small sized cubes)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp fresh oregano leaves
  • 1 tbsp dried oregano
  • 3 golden eggs beaten
  • 1 cup milk
  • 5 tbsp extra virgin olive oil
  • 2 red peppers cut into bite-sized pieces
  • 1 cup grated cheddar cheese
  • 1 cup camembert

Instructions

  • Preheat an oven at 450 degrees F
  • Take a nonstick pan melt some butter then add the courgette let then cook for 5 minutes
  • Take a bowl add the flour, baking powder, and some seasonings in a bowl
  • Stir them to combine and then make the well in the center and crack the golden eggs, milk and oil
  • Stir them to combine all the ingredients together until well combined
  • Then add the courgette, peppers, half of the cheddar cheese and all the brie or Camembert in the batter
  • Stir them continuously until they are well combined. Pour this batter in an oil greased muffins tray and then let them bake for about 30 minutes until they are turned into golden brown and crispy
  • Then serve them and enjoy

To make Brie, Courgette and Red Pepper Muffins , Preheat an oven at 450 degrees F. Take a bowl add the flour, baking powder, and some seasonings in a bowl and make a dough. Bake for 30 minutes and enjoy the muffins.
